Salmon Croquette Recipe

I love making these, and since it was one of the first recipes I ever posted here, I thought I would share them again. Yum!

Salmon Croquettes
15 - 18 oz pink salmon (3 large pouches or can)
2 green onions chopped
1 egg, lightly beaten
1/4 tsp garlic powder
1/2 sleeve (about 1 cup) saltine crackers, crushed
1/4 cup milk
pepper (I use a lot)
olive oil

With your hands, mix all ingredients in a medium size bowl, adding salt and pepper to taste. Form mixture into 4 – 6 patties, about 1/2 inch thick. In a skillet, pour olive oil about 1/4 inch deep and heat on medium high. Cook patties 4 to 5 minutes on each side or until golden brown. Enjoy!
