We had a young farmer event a few weeks ago, and I was in charge of dessert. I was still (still am) in the not-much-sleep-at-night newborn stage, so I decided to keep it simple. I made two classic desserts that never disappoint – banana pudding and chocolate delight. These are recipes every cook needs in her stash!
I made my Mimi’s no-cook banana pudding. I pulled the recipe out of my book and had to decipher what I had written probably 10 years ago. My Mimi doesn’t go to much by recipes, so she doesn’t give them out that well either. Thank goodness growing up I got to spend many Sundays getting lessons from her!
This is what I had to go on! The rest was from memory.
Banana Pudding
1 large instant vanilla pudding
1 can sweetened condensed milk
1 1/2 cups milk
16oz whipped topping, thawed
Bananas, sliced
1 box Nilla wafers (I buy Nabisco brand.)
I made two puddings, so I doubled the recipe. I use store brand ingredients EXCEPT for the Nilla wafers.
Whisk together first three ingredients.
The best thing about cooking with sweetened condensed milk?
Fold in whipped topping until smooth.
In a deep 8x8 or larger dish, begin layering with Nilla wafers on the bottom. Layer bananas on top of the Nilla wafers and spread a portion of the pudding mixture on top.
Why do I use the big square plastic dish? Because my Mimi does!
Repeat for four layers, ending with pudding mixture. Refrigerate several hours or overnight.
