I have many recipes that I love, but this meatloaf that Linsey shared with me a few years ago is really one of my go to dishes. I usually have all of the ingredients on hand, I can throw it together in no time, and everyone loves it! Barbeque meatloaf printable version.
I use very lean ground beef for this recipe – usually 93/7 – so that there is not too much grease in the dish after cooking.
To the meat, add 1 cup crushed saltine crackers.
Add 1 1/4 tsp salt.
About 1/2 tsp pepper.
1 egg
Chop one medium onion, and add it to the mixture. I used a large one for this loaf. We love onion, and Vidalias are in season!
Last, add 1/2 cup tomato sauce.
Messes allowed in this kitchen!
Mix well with hands. (I do this part, of course.)
Form into a loaf in a 3 quart casserole.
For the sauce, mix together 3/4 cup ketchup, 1 cup water, 2 tbsp packed brown sugar, 2 tbsp mustard, and 2 tbsp vinegar.
Wisk together until blended.
Pour over loaf, and bake for 1 hour 15 minutes at 325. Baste occasionally with sauce.
Slice, and serve sauce on top. Yum!
