Grilled Chicken Marinade

This week for Kelly's Korner's Show Us Your Life, folks are sharing grilling recipes. I haven't done Show Us Your Life since I was cleaning up room by room to show off our house, but I thought it was a great opportunity to share a chicken marinade that I use a lot. We grill quite often because it's so easy. Plus our Holland grill makes the best grilled chicken (and turkey) that I have ever put in my mouth! 

It seems that whenever I grill it rains, so maybe I should plan accordingly in August when the cotton needs water!
 

Grilled Chicken Marinade

2 eggs, beaten
1/2 cup oil
1 cup cider vinegar
1 T salt
2 T poultry seasoning
1 tsp black pepper

Mix all ingredients until well blended. Before grilling, marinate chicken for 2 hours or overnight.

**I usually make a double batch and use the marinade to sauce the chicken while grilling. But I don't baste with the liquid in which the chicken marinated; I use fresh marinade that I previously set aside. If using the marinade as a sauce while grilling, be aware that it does have eggs, so you might want to make sure it cooks thoroughly.
