Microwave Vidalia Onion

Vidalia onions are in season! A long time ago, my mom taught me how to cook them whole in the microwave. (Hopefully she won't skin me for sharing all her recipes! She doesn't use this for catering, so I figured it was okay.) 

It's not an exact science, but they're so yummy anyway you do them!

First you need a Vidalia onion for each person. Vidalia. Not a regular onion.

Cut each end off and peel off the layers until you have a nice smooth onion layer.

You can cut the top off more than the bottom.

Next, core a cone shaped piece out of the center of the top of each onion.

I had to cut some of the top off of the first onion to make the hole big enough.

The hole needs to a 1/2" deep or so.

Place the onions in a microwave safe dish, preferably glass, and put some shredded parmesan cheese in each onion. Fresh melts best, but I used pre-shredded.

Add about a 1/2 teaspoon of bullion -- or half a cube. I used the Knorr Chicken bullion dust.

I think that's about a half teaspoon, right? Not an exact science.

Add on a small pat of butter, if you wish!

Sprinkle on some Worchestershire sauce.

Cover with plastic wrap and put in the microwave.

Microwave 5 minutes for each onion. I did 10 minutes for my two. The plastic will poof up real high when cooking -- don't worry; that's normal!

After microwaving and before serving, carefully (It's a hot dish and really hot under that plastic!) remove the dish from the microwave and take off the plastic.

The smell of yumminess!

Enjoy your onion -- and the black stuff on the bottom of the dish is good too (at least it is to me -- but I'm weird sometimes)!

Be sure you get a Vidalia! If you love them like we do, you will have a new favorite side after trying this easy recipe! I also just made another recipe from and plan to share... stay tuned!
