Zesty Chicken Soup

Brad picked this soup out of one of my Taste of Home cookbooks that I got from Books are Fun when I was a teacher. They came once every couple months to set up a display for us teachers. Talk about great prices on books and gifts for kids -- I miss Books are Fun! (my wallet doesn't so much though)

Zesty Chicken Soup

1 1/4 pounds boneless skinless chicken breasts
4 cups water
1 medium onion, chopped
2 celery ribs, chopped
4 garlic cloves, minced
1 tablespoon canola oil
1 can (14 1/2 oz) Mexican diced tomatoes
1 can (14 1/2 oz) diced tomatoes
1 can (8 oz) tomato sauce
1 cup medium salsa
3 medum carrots, sliced
1 cup frozen white corn
1 can (4 oz) chopped green chilies
3 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon dried basil
Shredded cheddar cheese and tortilla chips, optional

Place chicken in a Dutch oven or soup kettle; add water. Bring to a boil; reduce heat. Cover and simmer for 10 - 15 minutes or until chicken is done. Remove chicken; cut into pieces. Return to cooking liquid.

In a large skillet, saute the onion, celery, and garlic in oil until tender; add to the Dutch oven.



Stir in the rest of the ingredients (I held the zucchini out until closer to the end to that it wouldn't be mushy.).


Our veggies cut nice and big as requested (by my husband of course!).

Bring to a boil. Reduce heat; cover and simmer for 20 - 25 minutes or until vegetables are tender.

Garnish with cheese and tortilla chips if desired. Soup may be frozen for up to 3 months.


The stuff I used.

I substituted a few things in the recipe, and my soup turned out pretty spicy.
So just know that if you make the soup and use Rotel and Herdez salsa, which is rather spicy, like I did to expect the same thing! I used two 10 ounce cans of Rotel instead of the can of Mexican tomatoes and can of green chilies. I used regular diced tomatoes but left out tomato sauce, because I didn't have any. We really enjoyed the soup. It's very low in calories too! (Except for the sour cream I put in mine!)
